According to Maletto, the <em>aurochs<\/em>, who lived in a geographically isolated area, which corresponds to the actual Piedmont, maintained a relative genetic purity thanks to the barrier represented by the Alpine mountains, adapting its characteristics to that environment.<\/p>\n<p>In a period between the Middle and Upper Paleolithic (25-30,000 years ago), for unknown reasons, in the lands where the aurochs was widespread, there was a <strong>massive migration\u00a0of Zeb\u00f9 from the Indian subcontinent<\/strong> (modern western Pakistan), which quickly occupied various parts of the European continent. Because of the natural barrier formed by the Alps, gradually the two populations of\u00a0<em>aurochs<\/em> and <strong>Zeb\u00f9<\/strong>\u00a0merged, <strong>giving rise to a breed with the characteristics of Piemontese.<\/strong><\/p>\n<h3>The history of the Fassone Piemontese<\/h3>\n<div id=\"attachment_668\" style=\"width: 410px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-668\" class=\"wp-image-668 size-wccarousel\" src=\"http:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/B1-TevinoMario1-400x285.jpg\" alt=\"La storia del Fassone \" width=\"400\" height=\"285\" srcset=\"https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/B1-TevinoMario1-400x285.jpg 400w, https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/B1-TevinoMario1-210x150.jpg 210w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><p id=\"caption-attachment-668\" class=\"wp-caption-text\">The history of Fassone Piemontese<\/p><\/div>\n<p>While the legendary origins of the Razza Piemontese are being challenged\u00a0by recent DNA analysis that seem to suggest an evolution from Alpine cattle strains, <strong>the\u00a0recent history of the Fassone is well known<\/strong>.<\/p>\n<p><strong>Everything begins with a natural mutation occurred on a Piemontese cow in Guarene d&#8217;Alba in 1886<\/strong>. In Borgata Bassi, Frazione Forcellini there was the first report of calves with an exceptional muscular development, especially in the thigh, which is the basis of the character &#8220;<strong>double-muscled<\/strong> &#8220;, the\u00a0muscle hypertrophy of the Fassone Piemontese. Initially the &#8220;thigh&#8221; bulls of Piemontese were viewed with suspicion and even the Ministry of Agriculture ordered the mass castration of all the &#8220;thigh&#8221; bulls. However, thanks to the paesant wisdom, farmers cultivated this character and, gradually, also changed the negative opinion of the technicians.<\/p>\n<h3>The muscle hypertrophy and myostatin<\/h3>\n<p>The phenomenon &#8220;thigh&#8221; or &#8220;double-muscled&#8221; is one of the <strong>distinctive somatic features of the Fassone Piemontese<\/strong>. It is an hypertrophy &#8211; or hyperplasia &#8211; \u00a0of the thigh muscles, due to natural genetic mutation of a specific gene on chromosome 2, called myostatin gene and usually referred to as MH (muscular hypertrophy). Myostatin is a protein that regulates muscle development. The mutation occurred makes that it is produced less than it should, so the muscles, less inhibited in the development of myostatin, are free to grow, becoming hypertrophic.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-642 size-wcstandard alignright\" src=\"http:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021-550x269.jpg\" alt=\"Razza Fassone Piemontese - Monferrato\" width=\"550\" height=\"269\" srcset=\"https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021-550x269.jpg 550w, https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021-300x147.jpg 300w, https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021-250x122.jpg 250w, https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021-368x180.jpg 368w, https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021-613x300.jpg 613w, https:\/\/www.cascinarosa33.it\/wp-content\/uploads\/2015\/09\/DSC_01021.jpg 680w\" sizes=\"auto, (max-width: 550px) 100vw, 550px\" \/><\/p>\n<h3>The Italian breed: work, milk and meat of the highest quality<\/h3>\n<p>First\u00a0<strong>working in the fields<\/strong>, then <strong>the milking<\/strong>\u00a0to produce typical cheeses, finally only more <strong>meat of the highest quality.<\/strong>\u00a0In short this was the evolution of the Razza Piemontese for the last 150 years.<\/p>\n<p>Today, the Piedmontese Breed called &#8220;<strong>Fassone<\/strong>&#8221; (from the French <em>fa\u00e7on<\/em> which means &#8220;way&#8221;) produces a high level of meat: <strong>tender, lean and low in fat but high nutritional quality<\/strong> (unsaturated fatty acids, omega-3 and omega-6) and a <strong>very low cholesterol level<\/strong> (just think that does not exceed that found in most fish, 48-60 mg \/ 100g depending on the cuts).<\/p>\n<p>If a common rule states that the meat is more fat, the more it is tender, this does not apply to the meat Fassone Piemontese: cuts containing less than 3% fat have been proven far more tender of the same from other breeds\u00a0containing more than 7 % of fat (test Warner-Bratzler).<\/p>\n<p>The Piemontese is the Italian breed\u00a0for excellence, and is a native breed.
